Cabernet Sauvignon
2021 was a vintage of exceptional quality, good rainfall over winter, mild spring and moderate summer temperatures produced wines that will live long in the cellar. The grapes were hand harvested 22nd, April from one single vineyard site located in the very south of the Heathcote region, Redesdale. The wine shows power and concentration.

| Winemaking | This fruit is sourced from the Coliban Glen vineyard. The grapes were fermented in open top fermenters after gentle destemming. The wine is then pressed and transferred into French Oak barrels for malolactic fermentation – 300L hogsheads, Racked twice during maturation and bottled February 2022. |
| Tasting note | Perfumed and spicy, showing those classic Cabernet Sauvignon varietals of dark fruits. Slightly lighter on its feet, medium – full bodied. The palate is concentrated and silky with finely structured tannins, which display wonderful poise and depth. |
AUSTRALIA (VIC) ~ Heathcote: Devil's Cave Vineyard
Nestled amidst bushlands in the McIvor Range Reserve, Devil’s Cave Vineyard is a family owned vineyard situated just past the Valley of the Liquid Ambers in Heathcote.
The ancient soils are said to be some 500 million years old which display some of the best characteristics for Shiraz vines and helps us to produce the world class Shiraz that Heathcote is well known for.
Our philosophy to making our wine is by using minimal chemical input in the vineyard
to maintain a healthy soil life which also follows in the winemaking allowing the wine to speak its true sense of place.
